Got the old extremely low profile tires off of my 13" rims and found that the fronts are 5.5" and the rears are 6.5" wide. I'm sending them out for reconditioning but I'm looking at options.
I don't want to go lower than 60 profile, will 205's fit, or should I only go with 195's. I plan on 185 60's on the front.

I think I have 15 x 6" on the Scorp...
and I run 205/50/15 rear, 195/50/15 front.
So fitment of tire onto wheel should not be a problem. Fitment of tire/wheel onto car I can't comment on.

They would be good on the rim, but they might rub the fender.

Yes
You can install 205/60 or 185/60 on those 6.5" rims.
Many people think that the 205/60 is a bit tall for the X. If you don't think so, this would be a good combination.

In the back with 205's. Anybody actually run 205 60 13s on their X?

No... they SHOULD fit just fine...
Don't know about your offset or backspacing though...
But if you lower the car in the front... 175HR50s look great along with 215HR50s in the rear.
I run 205HR60s on 5.5 wheels in the rear and they look and work just fine.

205 should be ok in rear
I have 205/60/13 in the rear with lots of room to spare.
I think 1.5 degrees of camber.

... so what is the number of spacers on the fonrt and\or rear?
I've got gold 13 x 6 MSW to match the gold 81X. I originally intended for 185/60 x 13 front and 205/60 x 13 rear.
Haven't fitted these yet as I am concerned about putting on extra spacers to keep things lined up; but the wheels may no longer be hub centric (thanks rapunzel).
I do have extra long studs - OMP 1510/25-8 - and tapered nuts ...

They look much better Brian
Very shiny indeed. I know it's all opinion, but I feel that the wheels look much better now than when they were green.
